100 Whole Grain Spelt WafflesPancakes Recipe:


100% Whole Grain Spelt Waffles/Pancakes
(with alternates for no eggs, no dairy, no soy)

3 cups spelt flour
1 1/2 Tablespoons non-aluminum baking powder
2 eggs (or 1 tablespoon Ener-G Egg Replacer)
1 cup nonfat vanilla yogurt (or 1 cup soy, roce or
       almond milk or soy yogurt)
2 - 3 cups apple juice (start with a little,
            add as needed)

Spray waffle iron with nonstick spray. (Option: Also
sprinkle grids with chopped pecans or use sesame seeds
for delicious toasted crunch!)

Add batter and bake at 375 F (medium high if no
indicator). Assume 3 to 4 minutes, or until steaming
nearly stops.

Note: Spelt is an ancestor of modern wheat, and may be
well tolerated by those who cannot use regular wheat,
although this is an individual matter. It is high in
gluten, making it excellent for yeasted breads, but
"tricky" in pancakes and waffles. The secret here? DO
NOT OVERBEAT! To do so would develop the gluten and
make tougher pancakes, cookies or waffles.

There is NO added fat in this recipe because none is
needed! Neither is there added salt (the baking
powder is already high in sodium.
