Italian Sausage with Parsley, Small Style Recipe:


Italian Sausage with Parsley, Small Style

These little sausages are a bit more delicate than
those in the other Italian sausage recipe, and they
are also much smaller. These are great for breakfast
or for a summer luncheon party. The parsley really
does quiet the flavors.

2 pounds pork butt, ground medium
1/4 pound pork fat, ground medium
1/2 cup chopped fresh parsley
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 tablespoons white wine
2 cloves garlic, crushed

Mix all the ingredients together well, and then let stand for one hour. Mix
again and stuff into breakfast-sausage--size casings.

Makes about 2 1/4 pounds
