Mutton curry
This is a tasty, satisfying and nutritious meal!
Ingredients
750g - 1kg Mutton
2 Tablespoons sunflower oil
4-6 teaspoons Rajah curry powder
salt and black pepper
2 sliced onions
1 tin of tomatoes
1 teaspoon each of garlic flakes, turmeric, ginger
1 tablespoon brown sugar
A squeeze of lemon juice
2-4 large potatoes peeled and cut in 4
2 cups of rice
Method
Fry the mutton in oil in a heavy pan, remove, then fry onions, garlic;
put mutton back in pan and add curry and spices, sugar, salt and pepper and fry and
turn until coated with curry mixture. Add tomatoes, potatoes, lemon juice and a cup
of hot water. Simmer on low heat until mutton is tender (about 1 half hour to 2
hours) add hot water occasionally if needed to prevent drying. Prepare the rice in
the meanwhile.
Serve up curry piping hot with fluffy rice, chopped fresh tomato and onions,
chutney, garnish with coriander leaves (Dhania) round off with tasty vegetable such
as peas, beans, carrots or mixed vegetables.
