RockRoll Sea Bass Recipe:
ROCK&ROLL SEA BASS
3/4LB fresh sea bass
1 med sweet white onion
1 med red bell pepper
1 med yellow bell pepper
1 ear sweet yellow corn
sour cream for garnish
1 pkg taco seasoning
8 oz olive oil
7 ea sprigs cilantro
5 oz yellow rice
1 tsp tobasco sauce
1) Mix 1/2 pkg of Taco Seasoning with 3oz olive oil.
2) Wisk Tobasco sauce with 2tbl sour cream and set
aside.
3) Small dice sweet onion and set aside.
4) Med dice bell peppers and husk corn (set aside).
5) Coarse cut cilantro.
6) Cook rice till done. (For added richness, use
chicken stock instead of water.)
7) Pre-heat skillet.
8) Wisk oil and seasoning and add to pan.
9) When hot, add fish and saute approx 2 min.
(Remove and set aside.)
10) Add vegetables and saute 2 min, add cilantro and
cook 1 min.
11) Add fish to pan and cover 3 min.
12) Place on bed of rice on plate and garnish with
sour cream and cilantro.
Great with Pinot Gris and grilled Asparagus
