Baked Chicken
1 cup mashed potato flakes
1 teaspoon salt
1/4 teaspoon pepper
1/4 to 1/2 teaspoon poultry seasoning
1 egg, slightly beaten
1 teaspoon lemon juice
1 (2 1/2-3lb.) fryer, cut up and skinned
Heat oven to 375 F. In bag, combine flakes, salt,
pepper, and poultry seasoning. In shallow bowl,
combine egg and lemon juice. Dip a few pieces of
chicken at a time in egg mixture;shake in flake
mixture to coat. Place chicken on ungreased cookie
sheet and bake for 45 to 60 minutes(or untill juices
run clear).
