Chicken with Pineapple Recipe:


Chicken with Pineapple

      3 T Vegetable oil
      6    Boneless chicken breasts
          -skin removed and cut into thin strips
      1    Red bell pepper; chopped
      1    Green bell pepper; chopped
    2/3 c Onion; chopped
    1/3 c Water chestnuts; sliced
      1 md Tomato; chopped
      1    Green anaheim chili; finely chopped & seeded
      3 T Fresh basil; chopped or
    3/4 ts Dried basil
      1 T Fresh cilantro; chopped
      2 T Red wine vinegar
       pn Salt; optional
          Black pepper to taste
      1 T Cornstarch
      1 cn 20-oz pineapple chunks; reserve juice
          -unsweetened works best
          Cooked brown rice
          Whole wheat pita bread

In a large skillet or wok, heat 2 tablespoons oil over
high heat until hot. Add chicken and stir-fry until
chicken turns a white color, about 3-4 minutes. Remove
from skillet or wok and place on plate. Heat
remaining oil in skillet or wok until hot. Add bell
peppers, and onion. Cook about 3 minutes. Add garlic,
water chestnuts, tomato, basil, cilantro, vinegar,
pepper, and salt if using. Cook for a minute or so.
Dissolve cornstarch in 1/3 cup reserved pineapple
juice. Stir into sauce. Cut pineapple chunks in half
and add to skillet or wok with remaining juice. Heat
mixture to boiling constantly stirring about 2
minutes. Cook 1 more minute until mixture thickens.
Return the chicken to skillet or wok and heat
through. Serve the mixture over cooked brown rice.

This will feed 4, but my hubby and I save the rest for
a lunch portion. Refrigerate leftovers in a microwave
totable container. Next day wrap a whole pita bread
in plastic wrap or put in a sealed plastic bag to keep
pita bread fresh. Tote to work.

To heat lunch: remove cover from microwave container
unless it is safe to use in oven. Put a piece of wax
paper or plastic over container and microwave for
about 2 minutes or until heated through. Cut a slice
off the top of the pita and fill with a layer of brown
rice. Spoon chicken/pineapple mixture into the bread
and you have yourself a very low-cal, nutritious lunch
that is filling, tasty, and very simple to fix.
