Beef Jerky


Beef Jerky Recipe:


Beef Jerky

1 cup Soy Sauce
2 Tablespoons Worcestershire Sauce
1 Tablespoon Lemon Juice
3-8 dashes of Tabasco (or equivalent)
1/2 Tablespoon black pepper
2-6 lbs steak (your choice)

In bowl, mix Soy Sauce, Worcestershire Sauce, Lemon
Juice, Tabasco and pepper.

Partially freeze steak. Once the steak is firm enough
to slice, cut into approximately 1/4 inch thick
slices. (ENSURE YOU SLICE WITH THE GRAIN.) Marinade
or toss the steak slices in the mixture. (Do not
discard remaining mixture, it will be used later.
Place in a bowl.)

Use a cake rack or equivelant on top of a cookie
sheet. Place the slices on the rack closely together,
but not overlapping. sprinkle generously with black
pepper.

Heat in oven set between 150 to 175 degrees for
approximately 4 hours. Turn each slice, cover with
mixture, and sprinkle with pepper again. Return to
oven for another 4-6 hours.
