German Potato Salad Recipe:
German Potato Salad
~ 8 medium potatoes, boiled, then pealed and diced
8-10 slices of bacon
1 small onion
Vinegar
2 cups of mayonnaise
Put the diced potatoes in a large bowl and set aside.
In a frying pan, fry diced bacon and chopped onion
together until the bacon is cooked, but not crisp.
Drain grease and add about 1/4 cup Vinegar, and cook
for about a minute longer allowing vinegar to soak
through. Remove from heat. Stir the mayonaise into
this mixture. Taste. At this time you can decide if
you want to add more vinegar. Make it so it tastes
right to you. Mix in the mayonnaise mixture with the
potatoes.
Refrigerate for at least an hour before serving.
