Harvest Tomato Salad
6 ripe tomatoes, cut in wedges
1 small sweet red bell pepper, sliced or chunked
1 small sweet Vidalia onion, sliced
1 cup sliced pitted black olives
1 cup sliced fresh mushrooms
2/3 cup oil
1/4 cup vinegar
1/4 cup fresh parsley
1/4 cup sliced green onions
1/4 teaspoon salt
1/4 teaspoon lemon pepper
1 teaspoon sugar
1 teaspoon dried basil
Prepare vegetables and combine in a salad bowl.
Blend remaining ingredients and pour over vegetables.
Cover and refrigerate for 3-4 hours.
