Banana-Chocolate Topping


Banana-Chocolate Topping Recipe:


Banana-Chocolate Topping

1.5 lbs of chocolate
1 c vanila cream
1/3 c Creme de Banana (Liqueur)
2 ripe bananas

Puree the bananas and add Creme de Banana, set aside.

Melt chocolate until it is smooth and the temperature
is 115 degrees.

Place pan in ice water and mix chocolate to cool,
stirring constantly. When chocolate is about 80 to 90
degrees, add cream mixture and whip in a blender until
smooth. Once blended, add the banana mixture. Whip
in blender until thoroughly incorporated. Chill.

Directions for working with chocolate

1. Either melt chocolate in a double boiler or over
the lowest heat on the stove, stirring frequently.
2. NEVER let the chocolate get above 120 degrees F.
3. When working with chocolate, never get water into
the chocolate.
