Alfredo
(A recipe from a purveyor of fresh pasta)
To make Alfredo for one pound pasta:
Simmer 2/3 cup heavy cream with 3 Tbs. butter over
medium heat until thickened (about 1 minute).
Add another 1/3 cup cream, 2/3 cup freshly grated
parmigiano, 1/4 tsp. salt, 6 grinds of pepper and a
pinch of nutmeg.
Heat one more minute, then toss with pasta.
